      Over the past 30 years, the craft beer phenomenon has steadily gained momentum worldwide, particularly in the United States. However, Turkey remains significantly behind, both in terms of the number of craft breweries and overall production. For years, we dreamed of bringing craft beer to life in our hometown of Adana. During the pandemic, we mustered the courage to pursue this dream, launching the à santé brand with a mission to pioneer and diversify the craft beer culture in Turkey.

      At à santé, our goal is for our name to be synonymous with quality, excellence in flavor, and true craftsmanship. We are committed to producing the finest, most flavorful, and premium beers in Turkey. While “à santé” translates to “to health” or “cheers” in French, for us, it represents the joy of sharing our exceptional beers with friends, savoring each moment with good company and great taste.

OUR PRODUCTION PROCESS

Milling

We mill the finest malts sourced from the best producers worldwide.

Mashing

The malts are mixed with hot water to activate the enzymes, converting the starches in the malt into fermentable sugars.

Lautering

The malt-water mixture is filtered to remove the spent grains, leaving only the wort behind.

Boiling

The filtered wort is then boiled, with hops added to impart the characteristic flavors of our products. This process blends the aromas from the malt and hops together.

Hot Conditioning

Before fermentation, we allow the wort to rest at a higher temperature to remove any remaining hop and malt sediment. During this phase, for some beers we add hops which give floral and spicy notes to the beer.

Cooling

We cool the conditioned wort to prepare it for fermentation.

Fermentation

The cooled wort is transferred to a fermentation tank, where yeast is added to begin the fermentation process, turning the sugars into alcohol.

Cold Conditioning

After fermentation, we allow the beer to rest, which causes the yeast to settle, resulting in a clearer beer. The resting period for ales is typically 15-20 days, while lagers require a longer conditioning time of 22-27 days.

Bottling

Once rested and ready for consumption, we bottle and label the beer, preparing it for shipment.
